Sorry for the bad quality of photos, this was obviously made with my phone! 

Wooohoooo I passed for my driving exam! After hours and hours of driving I finally made it! So I had something to celebrate. And with a celebration comes pie! So I decided to make a healthy mini “cheese”cake. Yeah it’s more a Skyr-cake, because there is actually no cheese involved here! But it is oh so delicious! Even my boyfriend really liked it! He is such a sweeth tooth and normally finds my healthy bakings not sweet enough. So after I posted this photo on Instagram, I couldn’t not share this recipe with you!

HEALTHY CHEESECAKE  // Reminder: I used a small baking tray of 12 cm!
✚  150 gram dates
✚  60 gram healthy nuts (almonds, walnuts, pecans)
✚  300 gram Skyr (Cranberry)
✚  5 gelatin sheets
✚  variation of fruits for topping

How it’s done:
✚ Add the dates and nuts in a kitchen machine and mix until combined to a sticky mixture
✚ Press the date/nut mixture into a baking pan with your fingers or a spoon
✚ Place the baking pan in the freezer
✚ Leave the gelatin sheets in cold water for 5 minutes
✚ Add two spoons of the Skyr into a pan on low fire
✚ Squeeze the water out of the sheets and add them to the Skyr
✚ Keep stirring until the gelatin is solved completely
✚ Add the rest of the Skyr and stir firmly until all is combined
✚ Get your baking pan out of the freezer and pour the Skyr onto the bottom
✚ Place the “cheesecake” into the fridge and leave for about 2 hours
✚ When the Skyr is firm enough you may get it out and top it off with some delicious fruit!
✚ Make some pretty photos and… eat!!
