My favorite breakfast, next to oats, are these healthy protein pancakes! I could eat them everyday! I found the recipe when I was searching for an after-workout lunch recipe. Tried them once and oh they are so good!! It’s a perfect post workout meal as they are packed with proteins! But I like them as breakfast too! Maybe a bit too much. This time I made them with berries, but they are also very good with peanut butter and banana. Mmmm! Hope you enjoy them as much as I do. I would love to know if you made them and what you think!
You’ll need (for 1 person):
✚ 50 grams of oats
✚ 1 tablespoon cottage cheese / 2 if you want to add it as topping as well
✚ 2 eggs (only use the egg whites)
✚ a dash of almond (or other) milk
✚ a hand full of blueberries or other fruit you like
✚ optional: honey/syrup for topping
Let’s go:
✚ Pour the oats, 1 tablespoon of cottage cheese, the milk and the two egg whites into a bowl.
✚ Mix it all together until you have a thick batter. If it’s too thick, add another dash of milk.
✚ Scoop the batter with a ladle and pour it into the pan. You can make two pancakes or three smaller ones. I like them thick, so I made two.
✚ Take 5-6 berries per pancake and push them into the pancake batter in your pan.
✚ Bake the pancakes 2-3 minutes per side.
✚ When they are beautiful golden-brown they are finished and you can top them with whatever you like! Honey, bananas, cottage cheese, syrup, more blueberries, strawberries, chocolate, peanutbutter and so on! And then…
